Sorry to be brief, but it was final dress night.
Many youtubers and keto “personalities” including myself so far, too often push these difficult, 20 ingredient recipes, in order to make foods that you miss when you are on keto. But I have a novel idea for you. Eat foods that are keto in their natural state. Salad, meat, olives and pickles etc. Don’t make your diet a hugely difficult thing that you can’t keep up. If a kitchen full of dishes is the biggest detterent to making meals, think more simply. Cucumber boats. Sliced meat. Cheese. These things are great to eat and leave you with one dirty knife, especially if you eat in a paper towel. You don’t have to, but you get my point. Olives are delicious. Avocados are a God send. You don’t need to cook for 12 either. Think about how you can make one pot meals. We are going to be making a few one-pan recipes in the near future, so be on the look out. Keto Paella…just sayin’…
Today we had a very simple plate, along with some Trader Joe’s white meat chicken salad. I didn’t take a picture of it, and frankly, the macros on it aren’t ideal. It’s 9 carbs for a container. But it was 3pm, and time to eat, if you know what I mean.
That’s another tricky keto topic I wanted to touch on. Sometimes you’re set with the intention of fasting until this or that time. Or your original plan doesn’t end up happening. These times aren’t the times to throw you diet to the wind. They are times to move your window. My plan was to go to the store, cook and eat by 2. It didn’t happen. So, when we finally got to the store I changed my plans. I was going to make Chicken pot pies…watch out for that one soon though! Alas, we didn’t have the time, so we had this cheese and salad plate instead.
